I wanted to re- pay her in some way, so I made her some chicken salad and potato salad. I also love potato salad, thus, an idea for a cooking column is born! I have always found that most families have a favorite recipe or way of making potato salad. If you don’t have a favorite potato salad, or if you just want to try something new, this month’s column is for you! Thank you, Celeste, for loaning me your copier and supplies! Deviled Egg Potato Salad 4 pounds potatoes 12 hard-boiled eggs 1 1/2 cups mayonnaise 1/4 cup yellow mustard (whole grain works well, too) 2 tablespoons white vinegar 2 tablespoons dill or sweet pickle relish Salt & pepper to taste Cut potatoes in half. In a large pot, boil potatoes with enough salted water to cover and boil potatoes just until tender, about 15 minutes. Drain when done, and place in a bowl to chill in the re- frigerator. When the potatoes are cooled down enough to handle, but still warm, peel using a paring knife. Then cube the potatoes. (I tend to peel my potatoes and cube them before cooking.) Peel and slice hard boiled eggs in half. Place the yolks in a mixing bowl, and set aside the egg whites. Mash the egg yolks, as you would for deviled eggs. Add mayonnaise, mustard, and vinegar to the mashed egg yolks and whisk until smooth and creamy. Fold the relish into egg yolk mixture. Chop the egg whites and add them in with the diced potatoes. Gently toss to combine and then gently fold in the dressing mixture. Season with salt and pepper to taste. Chill at least 1 hour, or preferably overnight, before serving. Loaded Potato Salad 2 pounds small red potatoes 1 tablespoon salt for cooking water 1/2 cup mayonnaise 1/3 cup sour Cream 2 teaspoons chives, chopped 1 teaspoon salt ½ teaspoon pepper ½ cup shredded Colby Jack cheese 6 slices bacon, cooked until crisp and chopped Add the potatoes to a large pot and cover them with cold water by 1-2 inches; add one tablespoon of salt. Place the pot over high heat and bring the water to a full boil. Boil the potatoes until they’re fork tender. A fork or knife should slide right in and out of the potato with no resistance. Drain the potatoes completely and let them cool. Add the mayonnaise, sour cream, chopped chives, salt and pepper to a medium bowl. Stir vigorously with a fork or small whisk to combine the ingredients and make it smooth and creamy. Refriger- ate the dressing until ready to use. When the potatoes are cool enough to handle, cut each potato into quarters or halves, depending on their size. Add the cut potatoes to a large bowl. Slice thin while still warm. Add remaining ingredients and let marinate for 30 minutes. Add dressing (recipe below), mix carefully, and serve hot or warm. Potato Salad Dressing ¼ cup flour ¼ cup sugar 2 teaspoons salt ½ teaspoon white pepper 6 tablespoons bacon drippings ½ cup cider vinegar 1-1/2 cups hot water Bring water, vinegar, and bacon drippings to a boil.
